Double Chocolate Cookie Ice-cream Sandwiches

Ingredients:
1/2 cup vegan butter
1 cup sugar
1/4 cup almond milk
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
3 tbsp cocoa powder
dairy-free chocolate chips (as much as you want)

Cream together butter and sugar. Add almond milk and vanilla. Stir to combine. Whisk together flour, baking powder, baking soda and cocoa. Stir to form a dough. Add chocolate chips. Roll into balls and place on a baking sheet. Bake at 350 F for 9-11 minutes. Let cookies cool and then sandwich your favourite ice-cream in between two (or three lol) of them! enjoy!
